One Skillet Stuffed Peppers Deconstructed


Saw this and had to make it.  I changed it up quite a bit to suit what I had on hand.  Everyone loved it, including the kids and for some picky eaters that is a very good thing.

I love that it is all in one pot.  Love that it came together very quickly.

One Skillet Deconstructed Stuffed Peppers

3 chicken breasts, chopped
1 andouille sausage, chopped
1 medium onion chopped
2 cloves garlic, minced
1/4 cup parsley
1 quart tomato juice
1 red bell pepper, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 packet soy sauce or 2 teaspoons soy sauce
1 tablespoon olive oil

Saute onion, chicken, andouille and peppers together until lightly golden.  Add in minced garlic and cook one minute more. Add in quart of tomato juice and parsley. Add in rice.  Make sure that the liquid is one inch above the rice.  If you stick your finger in, it should come up to your first knuckle.  Cover and let cook until the rice is cooked.  Sprinkle your favorite cheese over top, cover with lid and when it is melted, remove from heat and sprinkle on some finely minced bell pepper.  Serve.
