Turkey and Provolone Panini with Pesto


I actually bought this bread the day I made that bread in the previous post.  I wasn't sure if I was going to have enough time to make bread.  I wanted soup and sandwiches for dinner.

This sandwich I have had at a restaurant near by.  I love it so I recreated it at home.  It is a turkey and provolone panini with pesto.

Really simple, slather on pesto, place cheese on bread and then spinach leaves and turkey.  Toast in a frying pan.  I do not own a panini press.  All I do is place a little foil over the top of the frying pan and then place my tea kettle over that.  It sits neatly on there so it is perfect.
