Cheesy Dilled Zucchini Fritters


I love zucchini. I know there are people out there that don't. But hey if you don't, have you ever tried chocolate zucchini cake. You would never know it had zucchini in it. But that is precisely what I love about zucchini. VERSATILITY in a CHEAP vegetable.

Cheesy Dilled Zucchini Fritters
Lori's Lipsmacking Goodness

2 medium zucchinis, shredded
4 oz shredded cheese, I used Gruyere
2 tablespoons fresh dill, minced
3 tablespoons flour
2 eggs
1 small onion minced
s and p

Place shredded zucchini in a colander over a bowl and salt. Let stand 20 minutes. Squeeze excess water out and combine with remaining ingredients.

Fry in a little oil until browned.

  1. Oh it is such a staple in the summer. i feel like I used it in everything! My zucchini fritters didn't turn out last year, your seems to have a lot more flavor

  8. mmm...the fact that the zukes have been frittered is awesome enough, but adding cheese is an idea that makes these outstanding! i love the dill too. but not as much as the cheese. :)

  15. i love zucchini fritters! We got a recipe quite similar from my Italian girl friend's family back in highschool. Even my little boy likes them....what's not to like though? He takes them to school in his lunch. I always look forward to receiving zucchini from friends with over active gardens:)
