Bran Muffins made without cereal

I usually make my bran muffins with cereal, the one with the raisins.  I wanted a bran muffin recipe that used wheat bran, no cereal.  Why?  Because I  have some to use up.  In the process I found this recipe.  Its a pretty moist bran muffin but still has way less fat than the one in the stores and restaurants.  As always, muffins are great breakfast when you are on the go.

Bran Muffins
Adapted from this recipe at Allrecipes.

1 1/2 cups wheat bran
1 cup buttermilk
1/3 cup canola oil
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup raisins

Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
Mix together wheat bran and buttermilk; let stand for 10 minutes.  In a bowl combine oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  4. I love muffins that are moist and have a good texture, as you said yours did. Unfortunately sometimes mine don't turn out 100% moist or quite right. These look great.

  6. I really love bran muffins no matter whether they are made with cereal or not! I am pretty partial to the one made with raisin bran though - mostly because I made them with my Nanny when groing up. :)

  9. Excellent! I never keep bran cereal on hand but am quite fond of bran muffins. These sound easy to veganize and perfectly tasty, a winning combination in my book. :)

  10. I made these recently and did not have buttermilk so I used plain milk. They were delicious and not dry at all like some I have made. I will make them again using buttermilk!

  11. I made these today (March 16, 2018), with three small changes, and they were FABULOUS! I didn't have quite enough bran, so added about two TBSP. of wheat germ; I didn't have canola oil, so used grapeseed oil; I like muffins a bit less sweet, so I used a half-cup plus 2 TBSP. of brown sugar. I did have buttermilk, and that sat with the bran for maybe 20 minutes instead of 10. Also, I baked the muffins the full 20 minutes. They turned out so beautifully, and I enjoyed two, after they cooled, with a cup of peppermint tea. Perfection!
