Dutch Oven Bread and a giveaway



Dutch oven bread sounds really intriguing doesn't it? To make it in a Dutch oven is a pretty neat idea. Jim Lahey is the one who really popularized this bread and it sent off many interpretations. I love how ideas roll like that down the slope, picking up momentum as they roll. A brainstorming continuum. Love it. Imagine what we could do if we all put our creative minds together for the greater good of all.

I know, I know, it's about bread but like my gardening I can't help but draw larger conclusions or think about it as analogy. Its just how my mind works. Like when I pick out weeds in my garden to make it beautiful. How I can pick out "weedy" thoughts in my mind to make it more beautiful as well.

Dutch Oven Bread
I was inspired by this post here.

1/3 cup olive oil
1 cup cool water
1 tablespoon kosher salt
3 cups unbleached all purpose flour
1/2 teaspoon yeast

Measure one cup of flour out in a bowl sitr in salt and yeast, mix. Add in the wet ingredients and stir rapidly. Add the remainder of the flour and stir until its completely mixed. I used my hands mixing it right in the bowl. Place finished dough in a oiled bowl and cover. Let rise for 15 to 24 hours.

Remove from bowl and shape it into a bal, pulling the sides downa nd to the bottom and pinch it in place. Put the seam side down on a sheet or peel with corn meal dusted on it. Let rise for about two hours.

Preheat oven to 475F with your dutch oven inside. Once the temperature has been reached remove your pot from the oven and carefully slide in your bread. Cover the dutch oven and bake for 20 minutes. Remove lid and bake 20 to 30 minutes more. When it is a golden brown, remove from the oven. Take out of dutch oven at once and place on a rack to cool.

  1. Bread with a really thick Cinnamon swirl through out. Don't know if you've ever heard of Great Harvest Bread Company but they make great sweet breads.

  3. Laurie, I have to agree with Moonfairy and say sourdough! I follow this blog called Mark's Black Pot where he makes all of his things in an ACTUAL Dutch oven (the one with legs that you heat with charcoal!) His last post was on Dutch oven bread too.   14. My favorite by far is Sourdough bread, my starter always ready & waiting to go. Coming in a strong 2nd is Jim Lahey's Challah and of course the Ciabatta. Recently made Pizza bread from the sourdough, basically it's a bread that's shaped like a large doughnut..... it's all about the crust!! YUM!

  15. Yay, baby! I need one of these. I have a big one but who wants to mess with cleaning it when I don't have to.

    Well, I wish I could tell you the name of my fave bread but I don't know it...salami pepper Italian bread?

    I'm going to try your dutch oven bread. Pssst, don't tell anyone but I'm making homemade brioche this weekend! Can you believe, me? Crazy, right?!! Will you put in a nice word for me with the bread baking gods? :)

  16. I got on a real kick making this dutch oven bread for a while then got on the 5 Minutes a Day wagon. My favorite bread is probably the roasted garlic spelt bread in Healthy Bread in 5 Minutes a Day

  23. Ooooh, that bread looks good. I still haven't tried that recipe yet, though I have seen it around. Some day...too stuck in my traditions, I think.

    My favorite bread? Oh gosh. There are so many that I love, and I do mean love..french bread, garlic knots, plain ole white bread, cinnamon raisin, sourdough...nope can't choose just one.

  27. There was an episode on America's Test Kitchen on a modification of this very recipe (I think)that I have been planning to make for the last two months. It sure looks good! I've just been wondering if my dutch oven is large enough for it?? My very favourite bread is a braided Finnish Coffee bread (Pulla) that is mildly sweet and flavoured with yummy cardammon, there are plenty of recipes around, but this is the one I use as I can make the dough in the bread machine
