Korean Food: Mung Bean Sprout Salad

Another awesome side that we totally love at the Korean restaurant, Mung Bean Sprout Salad.

Mung Bean Sprout Salad/Sookju Namul
Adapted from this recipe.

3 cups mung bean spouts

1 tablespoon sesame oil
1 tablespoon sesame seeds
2 tablespoons chopped chives or green onions

Bring a pot of water to a boil, add salt.  Drop mung bean sprouts into boiling water and blanch for about two minutes.  Remove from heat and drain immediately. Add sesame oil and sesame seeds once they have been cooled.

hmmm...I'm not usually a fan of mung beans but the dressing sounds like this might be good.
