Singapore Noodles

I have been seeing Singapore noodles all over blogville. First, I saw them at One Perfect Bite, then on Tastespotting, then on Chow and Chatter. This and the cold Japanese noodles have been speaking to me. I did some recipe searches for the Singapore Noodles and there are as many ways to make them as there are noodles. As far as authenticity I don't know how close mine comes to the real thing but we did enjoy it anyway- authentic or not.

Singapore Noodles

3 celery ribs, sliced
3 carrots, sliced
1 red pepper, diced
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon turmeric
1 teaspoon cumin
2 tablespoons oyster sauce
1-2 pounds shrimp, shelled and deveined
2-4 cups noodles, I used longevity noodles

Cook noodles and drain.

Combine spices and set aside. In a large fry pan, saute celery, carrot and pepper in olive oil until soft. Add minced garic, cook one minute more. Add spices and oyster sauce. Finally add shrimp and cook until pink. Then add noodles.

I've never seen these before, your dish looks fantastic Lori! Sorry for my absence, first I had IE problems then I had to call verizon and be on the phone for 2 hrs cause i couldn't get on the internet. and last but not least Chloe my dog chewed on my laptop cord and it goes off in the middle of whatever I'm doing. I can't get a break!

I think at the end of the day it's all about whether you and your family enjoyed it or not. If you thought it was yummy everything is cool. Authenticity is only an issue when someone tries something that isn't authentic and they think the dish is cr*p. :p

Such a nice mix of aromatics and spices. Authentic or not the recipe looks good to me.

I'm from Singapore, and i can safey say that we DO NOT have 'Singapore Noodles' here.
It's really funny whenever we travel overseas and see this dish on the menu :D

girl- I believe that. I do like the name, something about the word Singapore that is very appealing.
