No Bake Special K Bars are pretty special alright
I have wanted to participate in SHF for a long time. Sometimes I have difficulty finding who is hosting and sometimes it just doesn't work out for the month. For those who have not heard of it please go and check it out at The Domestic Goddess site to learn more and find out who the latest host/hostess is. It's a great way to find collections of recipes. The most recent hostess is The Well Seasoned Cook. Lots of great photos and wonderful recipes at her site.
No Bake Special K Bars
Adapted from this recipe
1/4 cup agave syrup
1/4 cup honey
1/2 cup firmly packed brown sugar
1/2 cup peanut butter
3 cups Special K cereal (any corn flake type cereal will work here)
1 cup flaked coconut
Lightly spray an 8 x 8 size pan. In a medium sized bowl combine, coconut and cereal. In a sauce pan heat syrup, honey and brown sugar until it boils. Remove from heat and mix in peanut butter. Add mixture to the cereal mixture in the bowl. Combine quickly and spoon into pan. Press firmly on mixture to flatten and fill up the bottom of the pan. A rubber spatula works really well to flatten the mixture. Cool completely and cut into squares.
* I recommend making two batches because these disappeared quite quickly.

Looks like a pretty healthy bar too
Does this mean I should go and buy a box of Special K?
WOW! Really easy and hassle free :)
Murasaki- any corn flake will do but there is a nice texture to Special K- a little puffy- more air, lighter. Do you have Special K in Spain?
I agree, Lori. You must always make a double batch of these. They look scrummy!
Thanks so much for joining in SHF!
Lori, these are new to me and look really tasty.

hmmm, i thought these would taste like cardboard, but you have proven me wrong. because if you say its good then i truly do believe you.
Dawn- something about that peanut butter and coconut works well with Special K. Funny 'cause Special K is really not that special but totally works here (no offense Kellogg's but it is a little balnd).
Can I have 1 or 2 pieces Lori:D
ah, a quick and easy way to reach a sugar high--i like it. the coconut is key--nice touch!
ils sont à croquer, j'adore
bonne journée
Oh my goodness...those sound good! You had me at 'PEANUT BUTTER'
I am not surprised at all that they disappeared so quickly! Just reading the list of ingredients gave me the urge to grab a handful and inhale them!
Sorry you had a hard time with the Greek folks! Next time try the middle-eastern folks! I believe you can also order mastic online.
It's the perfect time of year for a yummy no bake treat.
I love that these only have good wholesome ingredients in them. Agave! Yum.
