HOW TO ENJOY A CUPCAKE

Cupcakes Spectacular 2008




Just ask my two year old and five year old.

I am so excited. This is the first recipe for a sweet treat that I made up by myself. AND I had success.

I have always liked recipes with sour cream in them. They always seemed to come out very moist. So...

COCONUT VANILLA CUPCAKES

1 stick unsalted butter, softened
1 teaspoon vanilla
2 teaspoons coconut oil
1/4 cup milk
2 eggs
1 cup sour cream
1 cup sugar
2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt

Preheat oven to 375 F. Cream butter and sugar. Mix until light and fluffy. Add coconut and vanilla. Add eggs one at a time. Combine dry ingredients: flour, salt and baking powder. Mix into wet batter alternately with milk and sour cream. Fill greased mini muffin tins 2/3 full. Bake for about 12 minutes. Makes about 48 little minis.

Oh, same with my 3 yo and 5 yo!! They are so excited with cupcakes, getting all messy with buttercream and sprinkles. Lovely to do with them really and surely you make beautiful coloured cupcakes, there, Lori. Thank you for participation on Cupcakes Spectacular 2008!
